Hakkoku opened in Ginza in 2018 under Hiroyuki Sato, formerly of the Michelin-starred Sushi Tokami. Its Bali outpost, run with Plan Do See Indonesia, opened at The Sayan House above the Ayung valley outside Ubud. Balinese chefs Putu and Diah trained at the Ginza shop before taking over the counter.
The format is a single sushi omakase, served to all guests at the same start time over about two hours. Rice is seasoned with red vinegar as in Ginza, and fish mixes Bali waters with imports such as tuna from Tsukiji wholesaler Yamayuki. Lunch is 15 courses at Rp1,300,000++ and dinner Rp1,800,000++ per person.
A good reason to stay in Ubud for lunch, when the valley view is clearest. Seatings start at 1pm and 6:30pm; book online or by WhatsApp. Hakkoku is listed in the Indonesia Gourmet Guide 2025/2026.
Menus, prices and seatings change and many counters book out, so please check with the restaurant before you go.
