Shoukouwa
Two-Michelin-star Edomae sushi counter at One Fullerton, led by chef...
Singapore has the deepest omakase scene in Southeast Asia, with two-Michelin-star sushi at Shoukouwa and Sushi Sakuta, one-star counters such as Hamamoto, Sushi Ichi and Sushi Kimura Plus, and tempura at Tenshima. Much of the fish is flown in from Tokyo's Toyosu market, and most counters seat a dozen or fewer.
Dinner omakase at the top counters runs S$380 to S$600 before service charge and GST; lunch is usually the cheaper way in. For less, Shunsui on Hongkong Street, Teppei in Tanjong Pagar and the Shiki omakase at Fat Cow all start under S$140. Popular counters book out weeks ahead and many take a card guarantee.
