Fillets was one of the first Thai-run omakase counters in Bangkok, opened by chef Chaichat 'Randy' Noprapa, a protégé of Masaharu Morimoto, on Lang Suan Road. It has since moved to the third floor of The Storeys at One Bangkok on Wireless Road, where guests sit at a semi-circular counter facing the kitchen. Fillets is listed in the 2026 Michelin Guide Thailand.
The menu is a kappo-style omakase that goes beyond sushi, combining raw cuts, grilled dishes and small bites with Japanese imports. Noprapa ages, smokes and dry-ages some fish and uses three types of vinegared rice matched to different seafood; reported highlights include five-day dry-aged chutoro nigiri and kuruma ebi. Menus run to 15 to 18 courses, with or without drink pairings. Listings in 2025 gave a starting price of about 3,500 baht, with the Signature Experience course reported at 7,900 baht, both plus service and tax.
