Hibana by Koki is a 14-seat teppanyaki counter on the basement level of Capella Hanoi, close to the Opera House in Hoan Kiem. Head chef Hiroshi Yamaguchi has held one Michelin star here every year from 2023 to 2026, and the restaurant describes him as the first Japanese chef in Vietnam to receive one.
Premium seafood, including abalone, spiny lobster, sea urchin and Hokkaido hairy crab, is flown in from Japan every fortnight, and certified Kyori beef arrives monthly from Yaeyama. The autumn menus run from a lunch menu at 3,500,000 VND to the Experience menu at 6,000,000 VND and the Signature menu at 8,500,000 VND, plus tax and 5% service charge. Dishes include an akami and caviar tartlet, teppan barracuda with sea urchin, handmade buckwheat soba and Yaeyama Kyori beef.
Hibana suits special occasions and solo diners who want to watch the cooking. It opens Tuesday to Saturday, dress is smart casual and a wine pairing is offered. Book through the online link or the hotel.
Menus, prices and seatings change and many counters book out, so please check with the restaurant before you go.
