SABI Sky Omakase is on the 25th floor of Centec Tower on Nguyen Thi Minh Khai, with a private entrance and views over the city. It opened in late 2025 and takes 18 guests per seating: 12 at a curved counter and six in a private room. One of the partners is Lanh, known in Saigon for importing premium fish. After 10pm the space becomes a lounge.
The kitchen is built around kuro-shari, rice seasoned with long-aged black vinegar and binchotan powder, which the restaurant says is new to Vietnam. Bluefin is natural-caught and dry-aged for 21 days, and the menus use fermentation and charcoal grilling. Ichi costs 3,900,000 VND, Ni 5,400,000 VND, San 6,900,000 VND and Mu 9,900,000 VND, plus charges. Highlights include bafun uni, black abalone and one-year-aged karasumi.
SABI suits evening occasions and diners who want a view with their sushi. Dinner runs in two seatings, at 6pm and 8pm, and a 50% deposit is required. Book on TableCheck.
Menus, prices and seatings change and many counters book out, so please check with the restaurant before you go.
