Sushi Hibiki is behind a plain wooden door on the ground floor of Four Seasons Place on Jalan Ampang. Chef-owner Makoto Saito, known as Sam, has made sushi for more than 20 years in Japan, Australia, Italy and Malaysia, including at The Ritz-Carlton Kyoto. He puts the comfort of guests at the centre of the meal.
The counter serves traditional Edomae sushi with classic ingredients. The January 2025 menu lists four courses: Iki, a short seven-course omakase at RM580; Miyabi, the signature ten-course omakase at RM750; Kiwami, a premium omakase at RM980; and Special Hibiki, Chef Sam's own menu at RM1,480, which must be booked four days ahead. Prices are subject to service charge and tax.
Hibiki suits diners who want a chef-owned counter in the KLCC area with a range of price points. Book through TableCheck; children under six are not seated, dress is smart casual and corkage applies to wine, sake and spirits.
Menus, prices and seatings change and many counters book out, so please check with the restaurant before you go.

Counters are small and book out, so reserve ahead.
