About

Hinoki opened in mid-2026 on the ground floor of the Keyland building on Arnaiz Avenue, Legazpi Village. Chef Yusuke Hino, who speaks Filipino, previously led Senju at Edsa Shangri-La and cooked at TakaHisa in Dubai. He partners with the Recto family, also behind M Dining, and the room has an omakase bar, an à la carte area and private rooms.

There are two omakase menus. The ₱8,000++ version brings three appetisers, nine nigiri and one signature dish; the ₱10,000++ menu has five appetisers, ten nigiri and a choice of sushi-rice risotto or wagyu sukiyaki. Nigiri run from horse mackerel and Spanish mackerel to akami, chutoro, otoro and Baffin uni, and cooked courses include A5 wagyu carpaccio and a Miyazaki beef sandwich.

Good for sushi regulars after a conversational counter. The bar seats eight, dinner only. Reserve by phone or Instagram message.
